Homemade Flax Granola Recipe
It is literally FREEZING today in NYC, so I am hunkering down with some light reading, a good cup of coffee and my favorite flax granola! Yum!
Love this anti-inflammatory Flax Granola recipe from The Lyn-Genet Plan.
- 1 cup whole flax seed
- 1/2 cup water
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon clove
- 1/8 cup raisins
- 1/4 cup raw almonds
- 1/4 cup raw walnuts
- 1/8 cup unsweetened dried cranberries
- 1/8 teaspoon vanilla extract (optional)
- Combine the flax seeds with water and season with cinnamon and other desired spices. Refrigerate up to 8 hours or overnight. Spread in a thin layer on a baking sheet and bake at 275° F for 50 minutes to an hour, turning several times to dry out.
- During the last 10 minutes add raisins, nuts, and other dried fruits of your choosing, let cool and store in an airtight container. Enjoy!
** Portion size recommended is 1 C. Flax Granola + 1/2 C. Unsweetened Coconut Milk + 1/2 C. fresh Blueberries.
